Smoked Potato Salad Ingredients


3 lbs red potatoes
5 hard boiled eggs
1 small red onion, thickly sliced
1 cup celery, thinly sliced
1 can olives, halved
3/4 c. Italian salad dressing
1/4 c. mayonnaise
2 tsp. mustard
1-1/2 tsp. salt
1/2 tsp. pepper


Boil potatoes until "al dente" (cooked, but still somewhat firm).  Cut potatoes in half and place on grill, along with hard boiled eggs and onion slices.  Smoke at 220 for 1 hour.  Remove eggs and onion and set aside.  Continue to smoke potatoes for an additional hour.  Cut eggs, onion, and potatoes into desired size.  Mix together in large bowl, along with celery and olives.  In a medium bowl, whisk together Italian dressing, mayonnaise, mustard, salt, and pepper.  Pour over potato mixture and mix well.  Refrigerate for at least several hours before serving for best flavor.
