cranberry muffins baked on the BBQ

Pellet grills are famous for smoking, the type of indirect cooking that cooks your food in a deliciously smokey environment.  Did you know that you can also enjoy the more famous method of indirect cooking: Baking on a pellet grill.  Baking on your grill is even better when you use a stone or steel to further protect your bread from direct flame.  The recipe below was baked in a Platinum SE pellet grill on a Kuma Pizza Steel.  Set at 375° and rather than pre-heating your pizza steel, place it on the grill when along with the muffin batter and you will get a golden brown bottom and an even bake.

Cranberry muffins with a pizza steel

Combine the following dry ingredients in a medium sized bowl:

  • 1 cup whole wheat pastry flour
  • 1/2 cup white flour
  • 1/4 cup wheat bran (if you don't like the bran just eliminate it and increase the flour by 1/4 cup).
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

In separate bowl, mix the following ingredients:

  • 3/4 cup white sugar
  • 1/3 cup unsweetened applesauce
  • 1/3 cup cooking oil
  • 1/4 cup milk
  • 1/4 cup nonfat Greek yogurt
  • 3 tablespoons orange juice
  • 1 large egg

Add the dry ingredients, mix thoroughly then gently fold in the final ingredients:

  • 1 cup dried cranberries
  • 3/4 cup fresh blueberries

Scoop 12 equal portions into muffin tins and bake at 375° for 20-23 minutes.  Muffins are done when a toothpick will come out clean (or nearly so).
